Sometimes, making a full meal is just too much. I've resorted to these quick fix recipes on the Food Network site as a way to get my own ideas flowing when serving for one. These also make great appetizers when made en masse. Try one tonight!
Toast Toppers:
Step 1, slice loaves of French bread into 1/4 inch rounds.
Step 2, Brush each slice with olive oil or melted butter.
Step 3, Place the rounds on baking sheets and bake at 350 until crisp throughout and lightly golden around the edges, about 15 minutes.
* Spread with fig jam, top with Gorgonzola and prosciutto
*Top with sliced figs, drizzle with honey, sprinkle with sea salt
*Spread ricotta cheese, top with roasted red peppers, sprinkle with salt and pepper
*Rub with garlic, top with sliced tomatoes and sprinkle with sea salt
* Top with pesto and shaved Parmesan cheese
*Spread with ricotta, drizzle with olive oil, sprinkle salt and pepper
*Brush with olive oil, sprinkle manchengo, top with chorizo
*Chop rotisserie chicken and toss with BBQ sauce, top with chopped pickles
*Combine mayo and wasabi paste and spread, top with crap meat
* Whip cream cheese with chopped dill, spread and top with smoked salmon
*Top with thinly sliced apples and grated cheddar, broil until melted
*Wilt baby spinach and toss with crumbled bacon; top with hard-boiled eggs
*Whip cream cheese with lemon zest, top with fresh raspberries
*Spread with peanut butter, top with thinly sliced bananas, drizzle with honey
*Spread with mascarpone, top with crumbled bacon and chopped grapes
*Sprinkle with cream cheese, top with hot pepper jelly
*Spread with ricotta, drizzle honey, add pepper
