Celebrations at Home, a blog I love, posted this Hot Chicken Salad recipe that I just had to repost on a rainy day. Doesn't it just sound delicious even though it's almost summer? Sometimes nothing but a casserole will do!
Hot Chicken Salad
- 2 cups cooked chicken breast, shredded
- 1 cup diced celery
- 3/4 cup slivered almonds, lightly toasted
- 1/2 teaspoon white pepper
- 1 Tablespoon lemon juice
- 1 cup Hellman’s Light mayonnaise
- 1 to 1 1/2 cups shredded parmesan cheese
- 1 small can Fried onions
Preheat oven to 35o degrees, and spray a 9 x 11 baking dish with cooking spray.
Combine all ingredients together except the fried onions. Mix 1/2 the can into the mixture, reserving the rest for topping. Transfer to baking dish and cook for 20 minutes.
Top with remaining onions and cook for 5 more minutes. Serve with salad and crusty bread.
I make this but with potato chips on top...healthy!!! Loving your blog Finney and keeping up with all that you are doing. Keep up the great work!!
